Start by blending the rolled oats until it is nicely ground.

Melt the coconut oil in a pot.

Add the melted coconut oil, ground oats, almond flour, 3 ounces date syrup, baking soda, plant-based milk, vanilla essence or extract and a pinch of salt to a bowl. Mix the ingredients together until you have a flexible batter and put it in the refrigerator until it is completely chilled.

Preheat the oven to 350°F.

Place a sheet of parchment paper on a flat surface. Place the batter and then another sheet of parchment paper on top. You can use a rolling pin to flatten out and stretch the batter. Cut out the cookies and place on a cookie sheet. Bake for approximately 12-15 minutes or until the edges are golden brown. Once they have been taken out let them cook on a rack.

For the chocolate filling, melt chocolate in a pot and mix with 2 tablespoons date syrup until you have a creamy mixture.

Once the cookies are cool, fill with the chocolate filling.
