Peel and cut the potatoes into smallish chunks. Fill a pan with water and bring to a boil. Add in the potatoes and cook until tender (prick with a fork to check). Let cool.

Mince the onion and pickles.

Wash and cut the tomatoes into small pieces.

Peel the cooked shrimp making sure to remove any traces of shell. Cut into pieces.

In a bowl, combine the potato, onion, pickles, tomato, and shrimp. Mix and dress with a little olive oil, salt, and lemon.

Place the salad in the fridge undressed and let cool to serve chilled. Then serve and dress with olive oil, salt, and lemon.
