Curried Cauliflower, Peas, and Potatoes

Wash and cut the cauliflower into florets. Peel the potato and cut into medium cubes.

Bring a pan of water to a boil. Add 1 teaspoon salt and cook the potatoes for 5 minutes.

Then add the cauliflower and peas (this step is not necessary if using canned) and cook for 6–8 minutes. Check they are cooked to your liking by pricking with a fork. Strain the vegetables and set aside side for later.

While the vegetables are cooking, prepare the curry. Mince the garlic and onions and dice the tomato.

Fry the garlic and onion in a skillet with some oil, stirring often. When the onions are soft, add the diced tomato and a little salt. Cook for several minutes and then add the curry powder.

Add the vegetables to the curry in the skillet and mix well. Adjust the seasoning to your liking by tweaking the salt and curry powder. Now serve on your plate and enjoy.
