Toast the bread until it's pretty toasted.

Add a bit of olive oil to a pan and cook the eggs, stirring continuously until they are cooked thoroughly (about 2-3 minutes). Set aside.

For the sauce, chop the cucumber finely and mix in a bowl with the greek yogurt, the lemon juice, and salt.

Add the scrambled eggs and the chopped cherry tomatoes.

Place a few lettuce leaves on top of two of the bread slices. Distribute the egg mixture with the sauce on both sandwiches. Finish by placing the other two slices on top and close.
Tips & Tricks
You can use a store-bought tzatziki sauce, but take care to make sure there are no added sugars, or if there are, a very low amount.
