Eggplant and Goat Cheese Omelet

Instructions

Wash the eggplant and cut half into thin slices.

Add a bit of oil to a medium-sized pan and once it's hot place the slices of eggplant on. Place next to each other, but don't stack. Fry on both sides until golden brown.

çAdd the beaten eggs to the pan with a pinch of salt and cook on medium heat for 1 minute.

Add the sliced spinach and when it reduces in volume you can sprinkle the goat cheese on top.

When the egg begins to cook, close the omelet. Serve accompanied by a slice or two of whole wheat toast.
