Fried Rice with Navy Beans and Zucchini

Add a tablespoon of olive oil to a pot, once hot, add the sliced garlic clove. Once it begins to brown add the cup of rice. Stir for several minutes and then add 2 cups of hot water and a teaspoon of salt. Cook on high heat for 7 minutes and then lower the heat and cook on low for 8 more minutes. If in this time the rice has absorbed all the water but remains hard, add more water. Let it stand with the lid on for a while.

Dice the onion, squash, and zucchini into small cubes.

Add some olive oil to a pan. Once it's hot, cook the onion on medium heat for several minutes until tender.

Next, add the squash and cook for 5 minutes.

After this time add the zucchini, a bit of salt, and continue to cook the vegetables for 10 more minutes.

Add the drained navy beans to the pan and mix with the vegetables.

Lastly, add the rice to the pan and mix the ingredients. Cook for several minutes so the flavors integrate.
