Fried Rice with Vegetables and Beef

Start by cooking the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes. Then add the water and a teaspoon of salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

Wash and slice the mushrooms. Cut the onion into thin strips. Wash and cut the green beans into small pieces.

Cook the green beans in a pan of boiling water with a pinch of salt. When cooked as desired, remove the pan from the heat, drain, and set aside for later.

Heat a little olive oil in a large skillet and lightly fry the onion and mushrooms over medium heat for 6–7 minutes, stirring often. Season with a little salt.

In another skillet, lightly fry the beef steaks. Then cut into strips.

Add the beef strips and green beans to the skillet containing the onion and mushrooms and continue to cook for 3–4 more minutes.

Finally, add 5–6 tablespoons of rice to the skillet, or add as much as you want depending on how hungry you are. Stir well to incorporate while cooking over medium heat for 3–4 more minutes to infuse the flavors.

Tips & Tricks
We used shiitake mushrooms, but you can use any variety you might have in your fridge.
If you want to add a hint of freshness and color, toss in a handful of corn kernels.
