Kale and Feta Cakes

Preheat the oven to 400ºF.

Peel and cut the onion into strips, and mince the garlic. Wash the kale leaves.

Put a little olive oil into a skillet and lightly fry the garlic and onion together with the kale. Fry over medium heat for 5–6 minutes, stirring often.

Meanwhile, beat the eggs with a pinch of salt.

In a bowl, mix the beaten egg with the contents of the skillet, and crumble in the feta cheese. Gently stir to incorporate all the ingredients.

Pour the mixture into two ovenproof dishes of suitable size. Bake at 400ºF. They’re ready when you prick the center with a toothpick and it comes out clean.
