Lemon Rice with Almonds

Instructions

Put 2 cups of water with a bit of salt to boil. Once boiling add the rice. Let it cook for approximately 10 minutes or until the time indicated on the packaging.

Meanwhile, peel the onion and finely dice it. Do the same for the carrot and the rest of the vegetables. Washing or peeling when necessary.

Drizzle some oil in a pan and begin to introduce the vegetables in this order (the first ones to go in since they take longer to cook, the carrot and zucchini). When they are golden brown add the pre-cooked rice and stir well. Add a generous amount of salt and pepper and let it cool down for a while in the pan.

When you see that the rice has absorbed the oil from the vegetables, add a small drizzle of soy sauce, and/or a more generous amount of lemon juice, and some almonds or other type of nut of your choice.
Tips & Tricks
You can add some sesame seeds to this dish, as they are phenomenal with this type of rice recipe.
You can modify the ingredients to use up the vegetables you have in your kitchen.
