Instructions

Start off by cooking the pasta. For this, put water to boil and cook for the time indicated in the instructions.

Wash the eggplant and dice. Finely chop the garlic and previously washed parsley. Lastly, slice the onion into very thin slices.

Add a tablespoon of oil to a pan. When it's hot add the diced eggplant and let it cook for 15 minutes, flipping occasionally.

Add 2 tablespoons of oil into another pan. When it's hot add the thinly sliced onion and cook for 15 minutes, stirring frequently. After this time add the finely chopped garlic and a tablespoon of balsamic vinegar. Let it cook for 1 minute.

Now add the diced eggplant to this pan along with the tomato sauce. Mix the ingredients well using a spoon. Let it all cook in the pan for 5-7 more minutes, and you will notice that the sauce will begin to thicken.

Add the sauce you have just made to the macaroni and mix well. Finish by sprinkling the parsley on top. Your pasta dish is now ready to be enjoyed.
