Pasta with Eggplant and Tomato Sauce

Instructions

Fill a medium pan more than halfway with water and bring to a boil. Add the salt. Cook the pasta according to the instructions on the package.

Dice the eggplants and fry in a skillet with a little oil until tender and golden. Transfer to a bowl and set aside, leaving a little oil in the skillet for the next step.

Add the tomato sauce to the skillet together with the basil and oregano. Let cook for a few minutes.

Now add the eggplants and cook in the sauce for a couple of minutes.

Add the pasta to the skillet. Mix with a wooden spoon to incorporate all the ingredients.

Sprinkle a little Parmesan cheese over the top and it’s ready.
Tips & Tricks
If you don’t have any fresh basil at home, you can also use dried basil.
