Spaghetti with Zucchini and Tomato
“Zucchini is the star ingredient in this dish. Vegetables and pasta are always a winning combination.”
Cook the spaghetti in a pan of boiling water with salt for the time indicated on the package. Drain and set aside.
In the meantime, make the sauce. First wash and cut the zucchini into strips. Then wash and cut up the tomato.
Put a little olive oil into a skillet and heat. Then add the zucchini and fry for 3–4 minutes, stirring often. Next, add the tomato pieces and cook together with the zucchini for 2 more minutes. Season with salt and pepper and stir well. Finally, add the tomato sauce and cook for another couple of minutes, stirring often.
Add in the cooked spaghetti to the skillet and mix into the sauce. Your pasta is now ready to serve.
