Spaghetti with Tomato, Lentil, and Zucchini Sauce

Instructions

Boil the spaghetti in a pan with water and a pinch of salt for the time shown on the package. Then drain and set aside.

Cut the onion and zucchini into small dice.

Heat a little olive oil in a large skillet. Add the onion and zucchini and fry over medium heat for 5–7 minutes, stirring often.

Add the lentils and stir together with the vegetables for a few more minutes.

Transfer to a blender or food processor and blend well.

Return the mixture to the skillet and add the tomato sauce (homemade is best). Use a wooden spoon to mix until smooth. Adjust the seasoning with salt if needed.

Add the spaghetti to the skillet and stir to incorporate with the sauce. Serve on plates.
