Fill a pan with water and bring to a boil. Then add a teaspoon of salt and the macaroni. Cook the pasta for the time shown on the package.

In the meantime, wash and dice the eggplant and zucchini.

Put a little oil into a skillet and fry the diced vegetables, stirring often. Season with a pinch of salt.

When the vegetables are soft, add the tomato sauce and the macaroni. Stir well to incorporate all the ingredients. Cook for 4–5 more minutes. Then serve the pasta on plates.
Tips & Tricks
You can add any vegetables you like, such as mushrooms, onion, and broccoli. This dish has infinite possibilities.
Do you have any oregano? Add a few pinches as a finishing touch.
