Macaroni with Eggplant and Mushrooms

Instructions

Fill a pan with water and bring to a boil. Then add a little salt and the macaroni. Cook for the time shown on the package.

Now prepare the ingredients. Wash and cut the eggplant into medium chunks. Mince the onion or cut into strips, as desired. Wash and slice the mushrooms.

Heat the olive oil in a large skillet. Add the vegetables and fry lightly over medium heat for 8–10 minutes, stirring often, until tender.

Add the tomato puree (or any tomato sauce you have on hand) to the skillet, then season with a little salt and cook over medium heat for 4 minutes.

Transfer the macaroni to the skillet and mix with the sauce. Serve and enjoy!
Tips & Tricks
You can finish the dish by sprinkling a little cheese on top and melting under the oven broiler.
