Instructions

Blend the banana (ideally a ripe one) with the oat bran and the egg whites to a smooth batter.

Put a little butter into a nonstick skillet and place over medium heat.

When hot, add the desired portion of batter.

Cook each pancake for 1 minute each side or until golden.

You can drain off any excess oil on paper towels.

You can also serve them as they are or with a little honey.

Tips & Tricks

Use a little olive oil to grease the skillet if you want to avoid using saturated fats.

Try making these pancakes with oat flour instead of oat bran. But do make sure that the oats are ground very well.

Instead of 3 egg whites, you can use 1 egg white and 1 whole egg, but this will contain more fat.

If you want your oat and banana pancakes to be fluffier, add half a teaspoon of baking powder to the batter.

You can also flavor the batter with a little ground cinnamon or vanilla essence, for example.
