Instructions

Preheat the oven to 325°F.

Wash the orange and grate the zest. Then cut in half and squeeze the juice of one half. Set aside for use later. Peel and grate half a carrot.

Combine the rolled oats and milk in a bowl. Mix well and then add the other ingredients: flour, baking powder, oil, sugar, a pinch of salt, the juice of half an orange, egg, grated orange zest, and grated carrot. You can mix the batter manually with a whisk, or use a hand or stand mixer, a food processor, or a hand blender.

Grease a cake pan with butter. Pour in the batter and bake at 350°F for 40 minutes. The cake will be ready when you prick the center with a toothpick and it comes out clean.

Tips & Tricks

The orange zest and carrot should be very finely grated. You can shred the carrot finely in a food processor, or if using a grater, use the part with the smallest holes.
