Cut the chicken breast into strips or medium thick slices.

In a pan or skillet with a drizzle of oil cook the chicken. Add a pinch of salt.

Wash and cut the tomato into slices and toast the bread.

Over each piece of toast place the first layer of tomato. Place the chicken over the tomato and finish by adding a touch of olive oil and salt.
Tips & Tricks
You can improve this sandwich by making the following dressing: In a bowl add a couple tablespoons of olive oil, 3-4 chopped basil leaves, touch of salt and pepper and mix well. Pour the dressing over the sandwich.
You can also add a handful of lamb's lettuce or arugula to the sandwich to compliment it.
