Quick Chickpea and Spinach Soup

Mince the garlic and onion.

Heat the oil in a pan and lightly fry the garlic for a couple of minutes, stirring often, to infuse the oil with flavor. When the garlic colors, add the onion and fry for 5 more minutes, continuing to stir.

When the onion is soft, add the spinach and cook for another couple of minutes.

Stir in the chickpeas, drained and rinsed, season with a little salt.

Cover the ingredients with water, add a little more salt, and cover with a lid. Simmer for 20 minutes over low heat to infuse the soup with all the flavors. Then remove from the heat and serve.
Tips & Tricks
If you have any vegetable broth, use this instead of water. It will give more flavor to the dish.
If you have sweet paprika, feel free to add in a teaspoon. And another of cumin, if desired. They will add a delicious flavor.
