Instructions

Wash the quinoa under running water. Measure out 2 parts water to 1 part quinoa. Put the water into a pan and bring to a boil. Add the quinoa and let cook, about 20 minutes, until the kernels have popped open. Remove from the heat, drain, and set aside for later.

In the meantime, cook the rice. To do this, Put 2 cups of water into a pan, add a little salt, and bring to a boil. Then add the rice. Let cook, about 10 minutes (or as indicated on the package).

When the quinoa and rice are ready, put the oil into a skillet. When the oil is hot, fry the chicken breasts, adding the soy sauce. Once cooked, take out the chicken and shred by hand, or give it a few pulses in a food processor if you find this easier.

Mix all the ingredients––quinoa, rice, chicken, and cream cheese––in a bowl.

Shape into croquettes and fry in the skillet.
