Quinoa Salad with Tuna, Grapes, and Avocado

Wash the quinoa under running water. Fill a pan with water. You will need to measure out 2 parts water to 1 part quinoa. Bring to a boil, add the quinoa, and cook until the kernels have popped open, about 20 minutes, and then drain.

While the quinoa is cooking, wash the lettuce and cut into pieces of the desired size. Then cut open the avocado, scoop out the flesh, and cut into slices or dice. Finally, wash and halve the grapes.

Put the lettuce into a dish. Sprinkle several tablespoons of quinoa over the top. Arrange the avocado one one side, the drained tuna in the middle, and the washed and chopped grapes on the other side. Enjoy!
