Tuna and Pasta-Filled Avocados

Instructions

Fill a pan with water and bring to a boil. Add a little pasta and cook for the time indicated on the package. Once cooked, drain and let cool.

Drain the tuna from the cans and set aside.

Scoop out and dice the flesh from the avocado. Mince the onion.

In a bowl, mix the pasta, tuna, avocado cubes, and minced onion. Mix well.

In another bowl, mix a little olive oil with a little lemon juice, and a little salt and pepper. Stir and pour the dressing on the salad.

Fill the avocados with the salad you’ve just made.
Tips & Tricks
For this recipe we’ve used orzo. Orzo is a pasta shaped like grains of rice, just a little bigger. It is very popular in some countries. It’s great to use because it cooks in just 4 minutes in boiling water. This makes it a fabulous option when you’re short on time.
