Rice and Spinach with Marinated Tempeh

Add one tablespoon of olive oil in a pot, and when it's hot, add the sliced clove of garlic. When the garlic begins to color, add 1 cup of rice. Mix for a couple of minutes and then pour in 2 cups of hot water with a teaspoon of salt. Cook over high heat for 7 minutes and then low heat for 8 more minutes. If during this time the rice absorbed all of the water and it's still hard, add more water. Let it stand.

Cut the tempeh into cubes about less than an inch thick.

Mix the rest of the ingredients together in a bowl: the agave syrup, soy sauce, juice from half of a lemon, 2 chopped cloves of garlic, crushed cayenne, chopped onion, oil, water and a pinch of salt and pepper.

Place the cubed tempeh into the bowl with the rest of the ingredients, stir and let it marinate (the longer it marinates, the tastier it'll be, but if you can't wait for very long, 5 minutes is enough).

Heat up a pan or skillet to medium heat and place the contents from the bowl. Stir frequently for about 10 minutes (or until you see that it's golden).

In a separate bowl, place the rice, tempeh and a handful of fresh spinach. Enjoy!
