Add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Wash the spinach and slice it. Also slice half an onion. Lastly, dice the chicken breast.

Drizzle olive oil into a large pan. When it's hot add the onion and cook over medium heat for 2-3 minutes. After this time, add the chicken to the pan along with a pinch of salt. Sauté the chicken and the onion for 5-7 minutes. Make sure that the chicken is nice and golden brown.

Add the spinach to the pan and slowly it will begin to reduce in size. Add more salt to the ingredients. Cook for 4-5 minutes.

To finish it off, add the rice to the pan (about 6 tablespoons are enough). Gently stir so the ingredients mix well and top it off with chopped goat cheese. Leave it on the stove for 3-4 more minutes. After this time, remove the pan from the heat and serve.
