Rice with Salmon and Vegetables

Add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Finely dice half an onion and one washed and peeled carrot. Lightly fry these vegetables in a large pan with olive oil.

Wash the asparagus, remove the hard part, and then cut into medium size pieces. Next, wash and slice the mushrooms.

Add the asparagus and mushrooms to the pan once the onion is tender. Sauté the vegetables and add some salt.

When the vegetables are tender, to your desired level of doneness, add 5 tablespoons of the white rice you made (you can actually add as much as you'd like but we think 5 is enough for two). Mix the rice with the vegetables and sauté for 3-4 minutes.

While you sauté the rice, add some olive oil to another pan and cook the 2 salmon fillets with a pinch of salt.

Place the salmon on a plate and serve it with the delicious rice you have prepared.
