Shrimp and Mushroom Rice

Instructions

Put a tablespoon of olive oil in a skillet and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add the hot water and a teaspoon of salt. Heat over high heat for 7 minutes and then lower the heat and simmer for another 8 minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand, covered with a cloth.

Prepare the other ingredients while the rice is cooking. Wash and slice the mushrooms. If using canned, wash well under running water.

Take the shrimp out of the freezer to thaw. Peel if using fresh, removing all traces of shell.

Cut the onion into small pieces.

Put a little oil into a skillet and fry the onion for a few minutes, stirring often. Then add the mushrooms and leave to cook for 4–5 more minutes. Season with a little salt.

Finally, add the shrimp and cook for a couple of minutes together with the other ingredients.

Add the cooked rice to the skillet and stir well. Enjoy!
Tips & Tricks
If you want the rice to be velvety smooth, you can add a little cream. Add it to the skillet as the onion, mushrooms, and shrimp are cooking. Then add the rice.
If you have any chives, you can also add a little after serving.
