Spanish-style Zucchini and Mozzarella Croquettes

gruyere cheese

wheat flour

Wash and grate the zucchini. Grate the mozzarella and Gruyère cheese and set aside for later.

Put a little olive oil into a skillet with a pinch of salt and cook the zucchini over medium heat. When it softens, gradually stir in the flour.

After 2 minutes, lower the heat and gradually add the milk so that it is absorbed little by little, stirring constantly to prevent lumps from forming. When the mixture looks like a smooth sauce, add the grated cheese and keep stirring. Add a little more salt. You'll see the cheese melt in the heat.

Spread the mixture over a tray and let cool. Refrigerate for a couple of hours.

Take the mixture out of the fridge and start to roll into croquette shapes. Combine the breadcrumbs with the garlic powder on a plate. Add a pinch of parsley flakes if you have any. Coat each croquette in the breadcrumb mixture and deep-fry in a skillet with plenty of oil.
Tips & Tricks
Zucchini croquettes are perfect for freezing. What's more, frying them becomes easier because the croquettes aren't so soft.
You can use substitute the Gruyère with any other kind of cheese.
