Instructions

Wash the zucchini, and with a mandoline, cut the zucchini into long, thin strips (we're creating "noodles).

Wash the cherry tomatoes and cut them in half.

Cut the mozzarella into small pieces, or, if you already have small mozzarella balls you can drain them.

In a bowl, add the zucchini noodles, the cherry tomatoes, and mozzarella. Drain the corn, add it to the bowl, and mix it with the other ingredients.

In a separate bowl add the olive oil, juice from 1 lemon and salt and pepper. Mix and pour this dressing over the salad. Let it lightly marinate the salad for 10 minutes and then directly serve.

Tips & Tricks

It is not necessary to cook the zucchini in a pan as the lemon and salt, from the dressing will cook it. This is why it's important that you let the dressing work its magic on the salad for the allotted time.

If you want to add more flavor to the dressing, a crushed clove of garlic, and pepper will do the trick.

If you are vegan you can substitute the mozzarella for your favorite vegan cheese.
