Instructions

Wash and cut the spinach into strips and dice the tomato.

Beat the eggs in a bowl and add the spinach and the tomato. Season with salt and pepper.

Heat some oil in a skillet. Then add the egg, spinach, and tomato mixture. Let set while pushing the mixture from away from edges of the skillet with a wooden spoon to keep from sticking.

Fold the omelet over or roll up, whatever is easier for you. Leave for 1 or 2 more minutes to finish cooking. Remove from the heat and serve.

Tips & Tricks

If you cook the omelet for a short time, it will be moist and light.

If you like your spinach very cooked, cook it for a few minutes prior to adding to the mixture. To do this, heat some oil into a skillet add only the spinach, and let cook. When you see that it is has wilted and turned dark (when softened), remove from the heat. Add into the bowl with the tomato and egg and continue on with the recipe.

If you have cherry tomatoes, you can use them instead of a regular tomato. Just take a handful of cherry tomatoes, wash and halve, and toss into the omelet.
