Instructions

Wash the potato, peel, and dice into small cubes.

Put water and a bit of salt into a pot. Once it starts to boil add the potato and cook for 10 minutes. If the potatoes are cut into medium or small cubes then they should be ready in this time, if not you can cook a few minutes longer until tender.

Slice the onion. Wash and dice the zucchini and tomatoes.

Add a drizzle of olive oil in a pan. Once it's hot add the onion and cook for several minutes. Add the zucchini and cook for 6-7 minutes. Add the potatoes and pieces of tomato to the pan with a bit of salt. Cook on medium-low heat for 5-6 minutes. Slowly the tomato will become tender. If you see that it dries out you can add some water to the ingredients.

Make two holes in the pan and add the eggs to them with a pinch of salt. Cover the pan and let it cook. This will take several minutes. After they have cooked you can serve immediately.
