Spinach Salad with Quinoa and Avocado

Instructions

Wash the quinoa. Put 1 1/2 cups water into a pot to boil. When it begins to boil, add the quinoa and a pinch of salt and cook for approximately 20 minutes until the seeds open. Remove from heat, drain, and let cool.

Wash and dice the apple, and avocado.

Wash the spinach and if they are too big, cut them into smaller pieces.

Add the spinach, quinoa, avocado, and apple to a bowl and gently mix.

Finish it off by sprinkling some cheese on top, along with some corn.
Tips & Tricks
You can add nuts and raisins to make the salad more delicious.
We dressed this salad with balsamic vinegar and oil.
If you're on a vegan diet, substitute the cheese for a vegan one.
