Spinach Salad with Stuffed Eggs

Instructions

Fill a pan with cold water and add the eggs. Bring the water to a boil over medium heat and cook the eggs for 10–12 minutes. Transfer the boiled the eggs to a bowl and let cool. When cold, peel and halve the eggs. Remove the yolks and combine in a bowl with the tuna and tomato sauce. Mix the ingredients together.

Now fill the eggs with the mixture.

Wash the spinach and scatter inside a salad bowl.

Peel the carrot and cut into thin strips and arrange over the spinach.

Sprinkle with feta cheese and then place the stuffed eggs on top.
Tips & Tricks
If you like, add a handful of olives (we used green olives stuffed with pimento).
And for a fabulous finishing touch, you can sprinkle a handful of butternut squash and sunflower seeds over the salad.
