Tofu, Zucchini, and Bell Pepper Sandwich

Instructions

Wash the vegetables and chop finely in a food processor. Just pulse a few times. If you don’t have a food processor, use a knife and cutting board to chop up the pepper, zucchini, and onion.

Put the tofu into the food processor and pulse a few times to crumble. Again, if you don’t have one, use a knife.

Heat a little olive oil in a large skillet. Add the tofu and vegetables and lightly fry for 7–8 minutes over medium heat, stirring often. Season with a little salt.

Toast the bread.

When the vegetables and tofu finish cooking, fill each sandwich with the contents of the skillet.
Tips & Tricks
We finished ours by adding a handful of cheese to the filling and we toasted the sandwiches in the skillet so that the heat would both toast the bread and melt the cheese. They couldn’t have been more amazing!
You can use soy sauce instead of salt.
You should use whole-grain bread because it’s better for you.
