Instructions

Preheat the oven to 350°F.

 To make chia egg, grind the chia seeds in a pepper grinder then transfer the powder to a bowl with 3 tablespoons warm water. Stand for 5 minutes and set aside.

Use a fork to mash the bananas (it's important to use very ripe ones) and set aside.

Combine all the dry ingredients (except the walnuts and chia egg) in a bowl and mix well. Next add the mashed banana, coconut milk, vanilla essence, and chia seeds. Stir to incorporate and add the walnuts.

Grease a rectangular baking pan with margarine and pour in the mixture. Put into the oven and bake, about 1 hour. It’s well worth the wait!

Baking times vary depending on your oven and the baking pan you use. Take out of the oven when you prick the center with a knife or toothpick and it comes out clean. Let cool, turn out, and enjoy!

If you see that the top is turning golden but the inside is still uncooked, cover with aluminum foil.
