Sugar-Free Banana and Cinnamon Pancakes
“Bye-bye sugar! We just don’t need you in this recipe! And we’re not going to miss you because the natural sweetness of the banana and the cinnamon flavor make these pancakes truly spectacular.”

Put the bananas in a bowl and use a fork to mash into a purée. If you prefer a more textured mix, mash leaving a few small pieces.
Combine the flour, yeast/baking powder, milk, egg, and cinnamon in your blender and blend until the ingredients are incorporated.
Add the banana purée to the mixture and use a spatula to mix in well.
Grease and heat a small skillet. Then add a little batter and tilt the skillet to spread over all the surface. When you see that small bubbles have formed on the surface, use a spatula to flip the pancake and finish cooking. Make as many as you can until all the batter is used up.

Feel free to drizzle on a little honey or agave syrup.
