Wash the zucchini and grate it. Place the zucchini in a colander and press so that any excess water is removed.

Finely dice an onion and a garlic clove.

Lastly, beat the eggs with a pinch of salt and black pepper.

Add the grated zucchini to a bowl followed by the onion, garlic, crumbled feta cheese, flour, and beaten eggs. Mix well. Let it stand for 5 minutes.

Meanwhile, drizzle some olive oil in a pan. Wait for it to heat up.

Using a spoon or ladle, add part of the batter into the pan and cook for several minutes. When you see the egg is cooked on that side, use a spatula to flip the omelet over.
