Zucchini and Potato Noodles with Egg

Peel the potato and wash the zucchini.
Use a mandolin slicer to cut the potato and zucchini into long ribbons.
Heat a little olive oil in a large skillet. When hot, add the minced garlic and lightly fry over medium heat, stirring regularly and taking care not to burn it.
Add the zucchini and potato noodles to the skillet and cook for 5–7 minutes, continuing to stir.
Cook the eggs as desired a few minutes before the zucchini and potato noodles finish cooking. You have lots of options. For instance, you can cook them in the microwave or do them fried or hard- or soft-boiled.
Arrange the zucchini and potato noodles on a plate and add the eggs. Season with a pinch of pepper and you’re done. Enjoy!
