Wash the zucchini and use a mandoline slicer or a knife to cut into long noodle-shaped strips.

Wash and slice the mushrooms. Wash and halve the cherry tomatoes.

Heat a little olive oil in a large skillet. Add the zoodles, tomatoes, and mushrooms and lightly fry for a couple of minutes, stirring often. Then break the eggs into the skillet and sprinkle a little salt over everything. Cover with a lid. Cook for 5–10 minutes, or until the eggs are cooked to your liking.
Tips & Tricks
We used quail eggs, but you can use any kind of eggs you want.
You can finish by scattering a few macadamia nuts over top.
