
Apple, Goat Cheese, and Squash Salad

Preheat the oven to 400°F.

Chop the squash into medium size pieces. Place on parchment paper that is resting on a baking sheet. Drizzle some oil and a pinch of salt on top and bake the squash for approximately 30 minutes.

Place the lettuce into the salad bowl. Add the sliced apples, the warm roasted squash, the pomegranate, and some walnuts and shredded cheese.

Dress with balsamic vinegar and oil and presto!
Tips & Tricks
Since the oven is already on you can take advantage and cook more squash and/or any other vegetables from other recipes.
You can combine different varieties of lettuce, and use the ones you have in your fridge. We used a few handfuls of arugula that we had in our fridge and the rest of a spring mix.
