Chicken and Mushroom Tacos with Cheese

Instructions

Put water to boil in a pot. Once it begins to boil add salt and add the chicken breast to cook. After 15 minutes remove it and drain. Use a fork to remove the chicken. If you would like, you can use your food processor to give a few whirls to shred the chicken.

Slice the onion and bell pepper. Wash the mushrooms and dice.

Add oil to a pan. Once it's hot add the sliced onion and pepper and cook for a minute.

Add the mushrooms to the pan along with some salt. Cook on medium heat until the mushrooms brown.

Add the shredded chicken and tomato. Mix everything and leave it on the stove for several minutes.

Fill each tortilla with this filling and then add some shredded cheese on top. Heat up the tortillas in a pan until the cheese melts (check out tips and tricks for other ways to heat it up). You can add some hot sauce or salsa on top to make them more delicious. Also top with some chopped cilantro on top.
Tips & Tricks
Once you have the tortillas filled and the cheese on top, you can place them in an oven-safe container like the one in the photo and place them in your air fryer or oven for just a few minutes at 350°F. You will see that the cheese melts and the tortillas toast a bit in a matter of minutes. They will be perfect.
