Finely chop the vegetables and cook in a pan for 10 minutes with a bit of oil until tender (if you use the spices we mention down below, then add at the end of this step).

Preheat the oven to 400ºF.

Add half of the tomato sauce and the cooked lentils into a pan and cook together for 10 minutes to thicken it. Add more salt if necessary.

Add some of the lentils to each tortilla, roll it up, and place lined up in an oven-safe dish. Add the rest of the tomato sauce on top, making sure to spread it out evenly. Sprinkle some cheese on top.

Bake for 10 minutes.
Tips & Tricks
Add some garlic powder, pepper, and paprika when you cook the vegetables to add more flavor.
Add a pinch of cumin and a teaspoon of chili powder to achieve a more Mexican flavor.
If you like spice, add some tabasco, or your favorite hot sauce.
Serve with some avocado to add a nice flavor contrast.
