Chicken and Vegetable Wraps

Instructions

Cut the onion into strips. Wash and cut the mushrooms into small pieces. Wash and cut the spinach into strips. Peel and grate the carrot.

Heat a little olive oil into a skillet and fry the chicken breast. When cooked through, shred with a knife or in a food processor on medium speed. Set aside.

Heat a little more oil in the same skillet. Add the onion and mushrooms. Lightly fry over medium heat for 4 minutes, stirring often. Next, add the carrot and spinach. Cook for 3 more minutes.

Add the shredded chicken to the skillet with the soy sauce. Mix everything well and let cook, about 1 more minute.

Heat the tortillas in the microwave or in a skillet and assemble into wraps with the chicken and vegetable filling. Enjoy!
Tips & Tricks
Try adding a handful of dried cranberries and raisins to the filling. The touch of sweetness is incredibly good.
