Instructions

Begin by dicing the onion and celery into small pieces, set aside.

Next, dice the chicken into small pieces and add the onion, celery, and chicken to a large soup kettle with olive oil.

Cook the vegetables and chicken over medium heat until the vegetables are soft and the chicken is white and fully cooked in the center. Then before assembling the rest of the soup, use a spatula and fork to shred the chicken into smaller strips.

Then add the chicken broth, diced tomatoes, kidney beans, spinach, parsley, oregano, salt, and black pepper (and 1/2 tsp of sage).

Simmer the soup over medium heat for approximately 20 to 30 minutes until the beans are soft and the spinach has completely wilted.
