First you have to soak the TVP. For this, put the TVP into a bowl, cover well with water, and add a tablespoon soy sauce. It should take 5–10 minutes to hydrate completely.

In the meantime, peel the garlic and onion, and cut into small dice. Heat a little oil in a skillet and fry the garlic and onion over medium heat. Season with a pinch of salt. When golden, add a little more oil and the spices (curry powder, cumin, cayenne pepper, and cinnamon). Stir well and toast the spices to release their flavors.

Finally, add the TVP to the skillet and stir a little more. After 2 minutes, add the coconut milk and let cook over medium heat until thick. Season with salt and pepper if required.

Serve with rice.
