Combine the light cream and cheese in pieces in a pan and place over medium heat. Stir from time to time. Season with a little pepper. The cheese will gradually melt. Then reduce the heat as low as possible and stir.

While the sauce is thickening, cook the meat. Heat a little olive oil in a skillet. When the skillet is very hot, add the two filet mignon steaks and sear on both sides, without adding salt. The cooking time depends on the level of doneness you prefer. For more well-done steaks, let cook a little longer.

Remove from the heat. Arrange the steaks on plates and season with a pinch of coarse sea salt or kosher salt. Finally, drizzle the steaks with a little of the Roquefort sauce.
