Fish with Creamy Mushrooms and Spinach

Finely chop the onion.

Wash and slice the mushrooms.

In a pan add some olive oil. Once it's hot add the onion and cook on medium heat, taking care not to burn it. After 2-3 minutes add the mushrooms and cook together with the onion for 8 minutes.

Add the chopped spinach. You will see that the spinach will reduce in size. Add the evaporated milk and a pinch of salt. Cook on low heat until you have a creamy sauce.

Meanwhile, in another pan add some oil and heat it up. Cook the sea bass filets.

Place the sea bass filets on your plates and accompany with the creamy mushrooms and spinach and some cooked brown rice.
