Instructions

Peel the banana and use a fork to mash until you have a puree.

Add the banana puree to a bowl along with the coconut oil, sugar, cocoa, and milk. Mix well with a hand mixer.

Add the flours and the yeast and beat again until there are no lumps.

Add a few drops of oil to a small pan. Once the oil is hot add some batter and let it spread out in the pan until every inch is covered and it forms a circle.

Once you see that the batter is done on one side (you will see some bubbles forming on the top) flip with a spatula and let it cook on the other side. Do this until you run out of batter.

For the topping you can use blueberries, dehydrated banana, a drizzle of agave syrup or even honey to sweeten it a bit.
