Lentils with Squash and Spinach

Instructions

Start by preparing the ingredients the following way: chop the garlic. Slice the onion. Peel the squash and the potato and cut into medium size pieces. Lastly, wash and slice the spinach.

In a pot add a drizzle of oil and when it's hot, cook the garlic and onion together with the squash on medium heat for 10 minutes. Add the ginger and mix.

Add the drained lentils, a bit of salt, and cook for 3-4 minutes. Add the spinach and add the coconut milk and water. Make sure everything has been covered and add a bit of salt and the curry.

Cover the pot and let it cook for approximately 20-25 minutes. Taste to make sure the flavors are right, and add more salt if necessary.
Tips & Tricks
You can substitute the water for more coconut milk. It will be very tasty.
You can add cumin powder to the recipe.
