Macaroni with Zucchini and Ground Meat
“If you feel like a substantial pasta dish today, what do you think of the recipe we have for you to try? It’s just the thing. Give it a go!”
Fill a pan with water and bring to a boil. Add the macaroni. Cook for the time shown on the package.
Wash and cut the zucchini into medium chunks. Also mince 1/2 onion and 1 clove garlic.
Heat a little olive oil in a large skillet. Then add the garlic and fry over medium heat, stirring often and taking care not to let it burn. Season the ground meat with salt and pepper and add to the skillet. Lightly fry over medium heat for 2–3 minutes, stirring often. Turn off the heat, transfer the meat to a plate, and set aside.
Put a little olive oil into the same skillet if needed and lightly fry the onion for a couple of minutes over medium heat, stirring often. Add the zucchini and season with a pinch of salt. Cook over medium heat for 6–7 minutes or until the vegetables are soft.
Then return the meat to the skillet and mix with the other ingredients.
Add the macaroni into the contents of the skillet, stirring over the heat for a few more minutes to incorporate the flavors. It’s ready to serve.
