Instructions

Wash the mushrooms very carefully. Make sure to remove any dirt. Cut off the stem and set aside for later. Put the washed mushroom caps on a baking sheet, drizzle with a little oil, and roast at 400ºF for 5 minutes. Then take out.

Wash the mushroom stems well. Remove the tough part and cut into small pieces.

Also chop half an onion and cut the zucchini into small dice.

Put a little olive oil into a skillet. When hot, add the onion, zucchini, and mushroom stems. Fry over medium heat for a few minutes, stirring often. Add a little salt.

Season the ground meat with salt and pepper. When you see that vegetables are starting to soften, add the ground meat into the skillet and cook together with the vegetables, stirring regularly. Let the flavors of the different ingredients blend well.

Stuff the mushrooms with the filling mixture that you just made and bake in the oven at 400ºF for 15 minutes. Then take out and serve.

Tips & Tricks

For a special touch, you can grate a little cheese over the stuffed mushroom caps so that it melts in the oven.

If your zucchini is very large, just use half.
